Rose Barfi with a twist/ नारळाच्या वड्या (with secret )/Rose Barfi Recipe/How To Make Barfi?

Rakhi pornima (राखी पौर्णिमा) or Raksha Bandhan is around the corner so make these lip smacking Coconut Barfi in less than 15 minutes and please your brothers or your siblings 🙂 Raksha Bandhan is nothing but a day when a brother takes an oath to protect his sister for life, and sister ties a Rakhee (a decorated thread) on his right wrist and feeds him sweets. On this day Narali Pornima is also celebrated. A festival where the fishermen worship Sea. Usually this is celebrated in Maharashtra-Goa region of India. So just wanted to give a twist to regular Narali Bhat menu and make this barfi. I have attached the recipe of Narali Bhat also here. It's an instant pot recipe to make traditional Narali Bhat.

Ingredients:

1. Fresh grated coconut: 2 Cups (fresh or frozen) 2. Sugar: 1 Cup 3. Milk Powder: 1/4 Cup 4. Gulkand: 1/4 to 1/2 Cup 5. Cardamom Powder: 1/2 Tssp 6. Slivered Alomond: 1 Tbsp 7. Pistachios: 1 Tbsp (Crushed) 8. Red food color: A few drops 9. Rose water: 1/4 Tsp 10. Ghee/ Clarified Butter: For greasing the pan

Method:

1. Dry roast the coconut till there is less moisture in it. 2. After 3-4 minutes of stirring add sugar to it and stir for 7-8 minutes or till the sugar is dissolved. 3. Add milk powder as a binding agent and to give rich texture to the barfi. 4. Stir till the mixture leaves the bottom of the pan. 5. Now add gulkand and stir it well. 6. Mix food color in milk and add it to the above mixture. 7. Add almonds and cardamom powder. Stir well. 8. After couple of minutes of stirring. Take this mixture on a greased plate. 9. Spread it well. Garnish with slivered almonds and crushed pistachios. 10. Put it in the refrigerator and cut in desired shape. 11. This barfi will be sticky initially so please cut it after 3-5 hours. On Tuesday, 14th April 2020 Indian Prime Minister, Mr Narendra Modi ji addressed the nation and asked people to drink Kadha, an Ayurvedic drink, to help boost their immune system. The AYUSH Ministry recommended to take this special concoction once or twice a day to improve your immunity, which will help your body fight off infections. Now you must be wondering why am I putting it out on YouTube? The reason is, recently I had very bad sore throat and wasn't feeling too well. I usually make this kadha regularly, but to my surprise I saw that this has been suggested by respected prime minister too. So for the benefit of all, thought of documenting it on my channel. So here is the recipe of how to make your own immunity-boosting drink at home.

Ingredients:

1. Basil (Tulsi) Leaves: 10-15 (small) 2. Cardamom powder: 1/2 Tsp 3. Cinnamon sticks: 2 4. Dried Ginger powder: 1/2 Tsp 5. Black Pepper powder: 1/2 Tsp 6. Raisin (Black & Golden): 8-10 7. Turmeric powder: 1/2 Tsp 8. Cloves: 4 9. Honey/Jaggery: 3 Tbsp 10. Fresh Lemon Juice 11. Water: 1.5-2 cups

Method:

1. Take water in a heavy bottom pan. 2. Add all the ingredients (except lemon juice) and boil it together. 3. After 8-9 minutes the water will reduce to half. 4. Strain it and add lemon juice. 5. Our homemade immunity-booster drink is now ready to be consumed. 6. The AYUSH Ministry recommended to take this Special Concoction once or twice a day to improve immunity, which will help your body fight off infections.

The flame of an ignited lamp (oil/ghee lamp) signifies the sacred Fire principle. Deep Poojan is done on Ashadha Amavasya to express gratitude to the Agni. All the diyas in the house are ignited and then worshiped by offering them diyas made with wheat flour and ghee (clarified butter) as prasadam. 

After this pooja, all the kids in the house eat them. They are very delicious and nutricious too. 

My Aaji (my grandmother) used to make them every year on the last day of Hindu month of Ashadh. So I have very fond memories with this day. We used crave for these diyas every year. 

This is how they are made. 

Ingredients: 

  1. Wheat flour: 1 Cup
  2. Suzi/ Rava: 2 Tbsp
  3. Jaggery: 1/2 Cup (grated)
  4. Cardamom powder: 1/2 Tsp
  5. Nutmeg powder: A Big pinch
  6. Salt: A small pinch
  7. Ghee/ Clarified butter: 3 Tbsp for diya/ 6-7 Tbsp for lighting the diyas
  8. Hot Water: 1 Cup

Method:  

  1. Take wheat flour in a bowl and add suzi, cardamom powder, nutmeg powder, salt and ghee in it. 
  2. Mix it well till ghee is well incorporated in the flour (refer the video)
  3. Now in another bowl take grated jaggery and hot water to it. Stir well till it's dissolved in the water. 
  4. Now add this water in the wheat mixture very carefully.
  5. Knead a soft dough bowl and put a lid on it. Keep it aside for 10-15 minutes. 
  6. Meanwhile take a steamer and grease it with ghee. Alternatively, you can spread a cotton cloth on the steamer basket or steamer plate. 
  7. Add 1.5 cups of water in the steamer pot. Put it on stove top and let it come to a rolling boil.
  8. Now check the dough. Knead once again for couple of minutes and start making the diyas. Please refer to the video for exact procedure.
  9. Once they are made then steam them for 12-15 minutes.
  10. After they are done, take them on a plate. Put thread in it and light the diyas.
  11. Perform a small pooja. (refer the video)
  12. once the diyas are burnt completely, give it to kids to eat. Very tasty and nutritious.

Dal Vada traditional vs Air Fryer/ Dal vadas in air fryer/how to make Dal vadas?/ कुरकुरीत डाळ वडा

Dal Vadas are loved by all our family members. My sister in law Anagha gave me this recipe almost 12 years back and I have been making them that way since then. But now I have air fryer and it's fun to use new gadget in the kitchen. So here we go Ingredients:
1. Chana dal/ Split chickpeas pulses: 1.5 cups 2. Onion: 1 small finely chopped 3. Cilantro: Handful 4. Green chilies- cilantro paste: To taste (1 Tsp) 5. Cumin seeds: 1 Tsp 6. Cumin-coriander powder: 1 Tsp 7. Asafoetida: A pinch 8. Turmeric powder: 1/2 Tsp 9. Curry Leaves: 10-12 10. Rice flour: 3/4 Cup 10. Salt: To taste 11. Oil for frying Method: 1. Soak chana dal for 3-4 hours in water. It doubles in size. 2. Put soaked dal in mixie pot. Add all the spices and salt. (ingredient list from 4-8) 3. Pulse it to coarse consistency. 4. Take this mixture in a bowl and add chopped onion & cilantro to it. 5. Also add rice flour (refer the video) and chopped curry leaves. 6. Start making vadas. (refer the video) 7. Put the pre-made vadas in refrigerator for 10-15 minutes. Air Fryer Methad:
1. Pre-heat the air fryer on 370 F for 5 minutes. 2. Put the vadas in the air fryer basket plate. 3. Put the air fryer lid on and put it on air fry mode on 400 F for 10 minutes. 4. Turn the vadas after 5 minutes and increase the remaining time to 8 minutes. 5. So in total the time is 13 minutes on 400 F 6. Take it out and do a fork test. (Refer the video) 7. Serve them hot with your choice of chutney or with ketchup. Traditional Deep Frying Method:
1. Heat the oil in kadhai/ wok for deep frying. 2. Put 4-5 vadas at a time in hot oil. 3. Fry them on medium to high flame for 4-5 minutes on each side. 4. Take it out and do a fork test. Have you ever tried roasting the peanuts in your microwave or in your Air Fryer? If no, then you are at the right place. Enjoy the video where I have shown the comparison between an air fryer lid and in a microwave oven. Please follow the above video link for detailed
explanation of the process and the gadgets too. In Instant Pot Air Fryer Lid (Air Fryer):
1. Take one cup of peanuts and put it in the air fryer basket. 2. Put the air fryer basket in the instant pot steel inner liner pot. Place it in the 6 qt instant pot. 3. Now put it on 380 F for 5 minutes on Roast mode. 4. Check and stir after 2 minutes. 5. Take it out on a plate, after 5 minutes beep goes off. 6. We are done with roasting the peanuts in 5 minutes. In Microwave oven:
1. Take one cup of peanuts and put it in a microwave safe bowl. 2. Put it for 2 minutes. Take it out stir and put it back for 2 more minutes. 3. Take it out and put it for 1 more minute and stir. Usually by this time the peanuts are roasted but if you feel you need more crisp peanuts then keep it for one more minutes and check it after every one minute interval, till you get the desired crisp. Kanda Bhaji/ Onion fritters/ खेकडा भजी/सिंहगडावरची कांदा भजी रेसिपी चटणी /How to make onion pakoras?






When it rains, we have to make Onion fritters or Kanda bhaji because that's what we saw our mother doing lol .... In marathi we say ," Shastra aste te" With simple ingredients which are readily available in any Maharshtrian or Indian household. Ingredients: 1. Onions: 3-4 medium 2. Chickpea flour: 8-10 Tbsp 3. Rice flour: 4-5 Tbsp 4. Red chilly powder: 1-2 Tsp 5. Turmeric powder: 1 Tsp 6. Cumin seeds: 1 Tsp 7. Carom seeds (Ajwain/ova): 1 Tsp 8. Cumin-coriander powder: 1 Tsp 9. Thecha: 1/2 Tsp or green chilies 2 finely chopped 10. Chopped cilantro: handful 10. Salt: To taste 11. Oil for frying Method: 1. Cut onions in thin strips (follow video instructions) 2. Add salt and all other spices one by one. 3. Add cilantro and massage everything well. 4. Keep it aside for 10-15 minutes so the onions will release it's own water. 5. Now start adding besan or chickpea flour and rice flour to the above mixture. No need to add any extra water. Add just enough flour to coat the onions. I added about 8 Tbsp chickpea flour and about 4 Tbsp of rice flour. 6. Meanwhile put the oil in a wok or kadhai for deep frying these fritters. 7. Now put a small quantity of better in the hot oil carefully (see the video) and fry them for 3-4 minutes on each side. 8. Serve it hot with onion chutney or tomato ketchup or green chutney. For Onion chutney:
Take one chopped onion add 1 Tsp red chili powder, 2 tbsp hot oil in which the fritters are fried and salt to taste. Stir and serve with the fritters.
